Tarago Cheese expands Shadows line with double cream brie

Tarago Cheese is expanding its Shadows series with the release of Shadows of White, a double cream brie available nationally from this month.

Produced in Gippsland, the brie is made using extra cream sourced from a nearby farm and matured for four weeks using traditional methods. The result is a soft-ripened cheese with a mousse-like texture and a white mould rind.

According to Tarago, the flavour profile includes notes of straw, pine nuts, and a light tang, with a soft, creamy finish. The brie is intended for cheese boards and casual entertaining, with suggested pairings including fresh bread, seasonal fruit, nuts, and white wine.

Shadows of White will be sold in 150g cut-and-wrap wedges (RRP $10) at Coles, Woolworths and IGA, and in 1.5kg wheels (approx. $70/kg) at selected delis and independent grocers.
