Q&A: A brazen journey that reaped sweet rewards

Business partners Caroline Kropack and George Kalpakis came from different corporate backgrounds before deciding to unite and build Brazen Brownies based on their passion for food and people. While they did not have experience in the food industry, the lessons they had acquired in their respective careers proved to be instrumental in the business’s growth. We talk to them as we learn more about their business journey.

IFMCG: What inspired you to enter the baking business despite coming from corporate, non-culinary-related fields?

CK: Our baking business was born from personal passion, being creative and baking for others. After years of practising law, I wanted to channel my energy into something that brought happiness to others, not just results. For George it was a time to connect with family and friends, as dessert is definitely something that makes people happy. Baking allowed us to merge creativity, precision, and passion in a way that our backgrounds couldn’t. It gave us a sense of purpose and joy to craft something people genuinely love.

What are the insights or values that you’ve acquired in your corporate careers that helped you in your entrepreneurial journey?

CK: Our corporate experience gave us confidence and was a source of great strength. George and I bring different skills to the table in our business, and our respective backgrounds have been very valuable, both in starting up and continuing to run our small business. George is very relationship-focused. He concentrates on people, culture and community. My legal background enables me to navigate contracts, compliance, and risk management with confidence. Being disciplined, with attention to detail and problem-solving skills. These strengths help us structure operations, manage resources, and make informed decisions across staffing, marketing, finances, and technology. We ensure that every aspect of the business runs smoothly and sustainably. We carried forward the importance of teamwork, resilience, and leadership, which have been invaluable in building a passionate team of people who work with us, and growing a brand that prides itself on quality and consistency.

How do you make your brownies stand out in a competitive market?

GK: In a market crowded with sweet treats, our brownies carve out a distinct niche through craftsmanship, creativity and the large range that we offer. Each batch is made by hand, using only premium ingredients as we have an unwavering commitment to quality. We make no compromises nor take shortcuts. Beyond that, we bring personality to our flavours, packaging, and experiences. This makes each brownie not just a treat, but a story, creating a memorable indulgence that keeps customers coming back.

Why is producing the brownies in small batches important in maintaining their consistent quality?

CK: Producing our brownies in small batches is central to our philosophy of no compromise on quality. It allows us to oversee every step of the process, from mixing to baking, through to hand-cutting to packaging. It ensures that each batch achieves the perfect balance of texture and flavour. This hands-on approach preserves the richness, freshness, and signature indulgence that define our brownies, and it’s the reason every bite tastes as exceptional as the last.

How important are the recognitions Brazen Brownies has received in gaining validation from the culinary industry?

GK: The recognitions we have received have been incredibly valuable, not just as accolades but as validation of our commitment to quality and creativity. They signal to the culinary industry, and to our customers, that our brownies meet the highest standards, and they reinforce our confidence in experimenting with new flavours and ideas. While awards are never the sole focus for us, they provide meaningful acknowledgment that the hard work and passion we put into every batch is being noticed and appreciated. But the real measure of success for us is seeing smiles around the table – every brownie shared, every customer delighted.

What is your vision for Brazen Brownies in the next couple of years?

GK: Our vision is to continue growing while staying true to our core values: quality, creativity, and indulgence with no compromise. Over the next few years, we aim to expand our reach, introduce exciting new flavours, and explore innovative ways to connect with our customers, whether through collaborations, limited editions, or experiences that make enjoying a brownie feel special. Ultimately, we want Brazen Brownies to be recognised not just as a treat, but as a brand that sets the standard for artisanal indulgence.
