Whole Foods Market has identified the key food and beverage trends expected to influence consumer behaviour and product development in 2026.

“This year’s trends highlight how curiosity, creativity and conscious choices are shaping the way people eat and shop,” said Sonya Gafsi Oblisk, chief merchandising and marketing officer at Whole Foods Market, after the retailer’s Trends Council, composed of culinary experts and buyers, chose eight.

“We’re inspired by the innovation we’re seeing across the food landscape and can’t wait to watch these ideas come to life in our aisles and beyond.”

Beef tallow, a traditional cooking fat, is making a comeback due to its high smoke point and rich flavour, appearing in new forms such as whipped and herb-infused varieties.

Fibre is gaining importance as consumers increasingly prioritise digestive health. Products fortified with fibre, including breads, pastas, and prebiotic plant-based meals, are becoming more common.

Frozen foods are evolving beyond convenience, with more restaurant-quality, globally inspired options like arancini and pupusas entering the market.

Instant foods are being redefined with nutrient-rich, ready-to-eat options driven by demand for quick but wholesome meals.

Vinegar is expanding its role from a basic condiment to a flavour enhancer in both cooking and beverages, with small-batch and fruit-infused varieties growing in popularity.

There is a noticeable shift toward naturally sweetened products, using ingredients like maple syrup and real fruit instead of refined sugars.

Packaging is becoming a key element of product appeal, with brands adopting bold, artistic designs to stand out on shelves.

Lastly, Whole Foods is drawing attention to female farmers as part of the United Nations’ International Year of the Woman Farmer in 2026, emphasising their role in sustainable agriculture.

These trends reflect broader shifts in consumer preferences and are expected to guide food industry innovation in the coming year, the grocer concluded.
