Paired perfectly with a cup of tea or coffee, the bite size treats offer a unique take on the quintessential flavours of the traditional Australian Lamington, combining crunchy coconut and fragrant rosella jelly in a rich cocoa base.
“Revisiting an old classic is an exciting challenge, and I wanted to develop a cookie flavour that would showcase Australian ingredients,” said Manfield said.
“Rosella is a native Australian flower, member of the hibiscus family. Rosella jelly is the perfect combination of sweetness & tartness which infuses this lamington cookie with a truly Australian flavour.”
“Cookies are the perfect gift so it seemed fitting to launch this exciting new flavour in the lead up to Mother’s Day celebrations this year, just in time for all mums to enjoy,” said Emilie Emond, marketing manager for Byron Bay Cookie Company.
The Rosella Lamington Cookies are the fourth treat created by Manfield for the cookie company, following the popular releases of the Gluten Free Coconut & Pistachio Macaroons, Passionfruit Dark Chocolate Cookie and the Salted Caramel Popcorn Cookie in 2016.
They have been served on board Qantas since 2003, and the new Rosella Lamington will be handed out on board selected domestic flights from May 2017.
Byron Bay Cookies by Christine Manfield Rosella Lamington Cookies will be available in David Jones from 13 March at RRP $19.95, as well as being available as a 60g cafe cookie from selected coffee shops at RRP $3.50.
