With Gusto wine cellar opens its doors in Victoria

Located at 27 Little Collins Street, adjacent to the Sheraton Melbourne Hotel, the cellar is Sheraton's first retail venture, providing locals and tourists a pitstop to explore and sample a wide range of Victorian produce - all under one roof.

With Gusto has opened its store in Melbourne, Victoria, offering locally-made wines and gourmet snacks from the region’s wineries and artisanal food makers.

Located at 27 Little Collins Street, adjacent to the Sheraton Melbourne Hotel, With Gusto is Sheraton’s first retail venture, providing locals and tourists a pitstop to explore and sample a wide range of Victorian produce – all under one roof.

The wine cellar, designed by Karavasil Architects, has a facade consisting of custom-designed wine structures that extend from the floor to the ceiling, showcasing the local produce of the region. The store’s interior has warm terracotta tones and features natural materials, creating a sensory-rich environment that echoes the spirit of Victoria.

“This approach seeks to pay tribute to the regions from which the store’s products originate, and the integration of landscape elements serves to soften the interior, reestablishing a grounding connection with the earth,” explained Vicki Karavasil, director of Karavasil Architects. 

Customers can shop or enjoy wine tastings while savouring bar bites from a menu that includes seafood ‘tinnies’, local cheeses, Mount Zero olives, and house-roasted spiced nuts. 

The store offers a wide range of wines from regional producers and winemakers, including Chief’s Son, Tar & Roses, Stilvi, Dal Zotto, Glen Garvald and POD.
