Noumi’s subsidiary brand MilkLab has introduced its reformulated lactose-free milk at Woolworths to meet rising consumer demand for lighter and more easily digestible dairy options.
Using ultrafiltration technology, the product filters milk through fine membranes, which concentrates natural protein and fat while reducing lactose sugar levels.
The resulting formulation contains 9 grams of sugar per serving, 25 per cent less than the average of 12 grams found in standard dairy milk, while enhancing texture and foam performance in hot coffee.
“Innovation at MilkLab is not about just getting it ‘good enough’. It’s about continuing the process until it’s perfected,” said Natalie Latimore, head of marketing at MilkLab.
“MilkLab has been built on collaboration with roasters, baristas, and our retail partners, ensuring that by the time it reaches a customer’s cup or shopping trolley, the final product has been refined to perfection.”
The three-year product development process involved 12 rounds of trial formulations, consumer testing conducted in partnership with Deakin University, and validation testing alongside commercial coffee roasters.
MilkLab’s Lactose-Free 1L is now available in long-life format at Woolworths stores and is also distributed to commercial cafes nationwide.
Last month, MilkLab’s parent Noumi announced its transition to private ownership after reaching an agreement with its largest shareholder to buy out all remaining shares.
