The cookie company and Aussie celebrity launched a new pop up to give cookie lovers a preview of the mouth-watering new cookie flavour to be released in September under the Byron Bay Cookies by Christine Manfield range.
“I had a lot of fun experimenting with the flavours and textures of this cookie to develop something Byron Bay Cookies hadn’t done before. I’m pleased to be working with [Ward and Powell] from Bistro Rex to bring to life such a delicious collaboration,” said Manfield.
The cookies combine ginger biscuits sandwiched with a nutmeg spiced fruit mince cream.
Crafted in collaboration with chefs Jo Ward and Michelle Powell from the critically acclaimed Bistro Rex, Christine’s Pear & Ginger Spice Crumble dessert will be exclusively available at the Potts Points venue until Saturday August 26th.
“We were really excited when Christine suggested holding a dessert pop up. It’s a first for Byron Bay Cookies and a great way to celebrate the upcoming launch of our latest creation with Christine,” said Emilie Emond, marketing manager for Byron Bay Cookie Company.
Paired perfectly with a glass of 2015 Eric Bordelet Poire Authentique pear cider, the unique dessert combines fragrant layers of ginger poached pears, fruit mince and lemon cream, topped with a decadent crumble mix using Ginger Spice Biscuits from Byron Bay Cookies.
From July 26th until August 26th, guests are invited to visit the pop up at Bistro Rex and be the first to try the limited edition dessert. A portion of the proceeds from each dessert sold during the month will be donated to Ovarian Cancer Australia, a charity Byron Bay Cookies, Christine Manfield and Bistro Rex feel passionate about.
The new Ginger Spice Cream Cookies from the Byron Bay Cookies by Christine Manfield range will be available from 1 September in David Jones store nationally, as well as online.
