Four Pillars Bloody Pinot Noir Gin returns for third year

Australian distillery Four Pillars is bringing back its limited‑edition Bloody Pinot Noir Gin for a third year, led by head distiller Sarah Prowse.

Made from Yarra Valley Pinot Noir grapes blended with the brand’s Rare Dry Gin, the 2025 expression is described as lighter and more delicate than its Bloody Shiraz Gin, with notes of rose petals, strawberries, cherries, and a hint of acidity.

Prowse, who first worked with Four Pillars during the 2017 Bloody Shiraz Gin harvest, said this year’s vintage produced high‑quality fruit.

“The 2025 vintage was picked from mid‑February, with Pinot Noir grapes showing deep colour and ripe tannins,” Prowse said

“Smaller, well‑formed bunches with better tannin development allowed us to soak whole bunches in high‑proof Rare Dry Gin before pressing, adding texture, ripe tannins, and an amaro‑like character to balance the red berry sweetness.”

The Bloody Pinot Noir Gin will initially be available to Four Pillars’ email subscribers tomorrow, ahead of general release on August 12 online and at its Healesville and Surry Hills distilleries.
